Taken from the best end of lamb, our lamb cutlets make the perfect midweek meal or elegant dinner party dish. One of our favourite ways to cook them is in a curry using Meah’s delicious curry sauce
Cooking Guide: Barbecuing, griddling, pan-frying and grilling are all methods that suit chops with an aim to getting lots of colour on the meat and any exposed fat sizzling until brown. Brush the chops with oil, season and cook for 3-5 minutes on each side.
If casseroling sear fat-side down in a hot pan until golden and some of the fat has rendered out, then cook on high for 1.5 hours.
