Sutton Hoo chickens are truly free range with meadows to roam and trees to roost in. They are given the environment to exhibit all their natural behaviours and no routine antibiotics and never any growth hormones are given. The breed used are slower growing, which allows the flavour and succulence to develop more fully. In the words of Belinda Nash co-founder of Sutton Hoo chickens:
“It’s because the chickens have more exercise, are grown for longer and have a natural, varied diet that they taste so much better.”
Butcher’s tip
Initially roast your chicken ‘upside’ down, so that all the juices generated in cooking seep into the breast meat. Turn it over 30-40minutes before the end of cooking to allow the skin to crisp and become golden.
Cooking Guide:
Pre heat oven to 180°C/Gas Mark 4.
Peel and halve a whole onion, sandwich a knob of Butter between the two halves and place in the cavity of the bird.
Roast the chicken over a trivet of root veg for 15mins per 500g plus 15minutes until juices are clear and the thickest part of the meat piping hot
