We source our bacon and gammons from a local family run business who have been curing and smoking gammons and bacon for around 150 years. Using time honoured, traditional methods to produce the most superb quality and flavour the gammons and bacon are slowly smoked in a brick kiln over a smouldering fire of oak shavings and sawdust. Under the watchful eye of their Master Smoker the meat turns a golden brown and is infused with a wonderful smoky flavour.
